A chance is available to work as an Apprentice Production Chef within the catering team to provide high quality, varied food operation to the hospitals patients. Within the role you will gain skills and qualifications pivotal to becoming a Production Chef.
As a Production Chef you will work with centrally developed standardised recipes and menus, producing high volumes of food.
No formal qualifications are required. However Maths and English will be assessed.
Working in a fast paced environment, you will gain practical experience in the day to day duties of working in a central production kitchen.
This is a fantastic opportunity if you are passionate about pursuing a career as a chef and have a genuine interest in hospitality within the Public Sector.
Main duties of the job
While training and learning craft skills you will, under the guidance of the team, help to produce the required meals for up to 1,800 patients daily.
The main aim of the post holder is to assist in the batch production of food for the catering operation and ensuring consistently high standards are adhered to in all aspects of the job.
Taking part and completing a Level 2 Qualification in Catering.
Working in an efficient manner to adhere to time sensitive duties.
Cutting, chopping and slicing foodstuffs.
Knife skills.
Preparing stocks, soups and sauces.
Roasting and braising techniques.
Preparing meat, fish and poultry.
Baking and desserts.
Prepare, produce and serve food in accordance with Food Hygiene legislation 1999.
Assist in stock taking and storage of stock, including checking deliveries.
Washing utensil and dishes and making sure they are store appropriately.
Work safely around kitchen equipment and monitor and report any maintenance issues.
To operate within the procedures designed to maintain a safe system of work and food hygiene.
To undertake all cleaning duties that may be required to ensure the smooth running of this busy catering operation.
To work co-operatively as a member of the catering staff to form a cohesive and effective team.
To complete and maintain the HACCP records in accordance with food safety legislation 1999.

Training & Qualifications
Essential criteria
- Working towards a Level 2 qualification in Catering and Professional Chef – Food Production and Cooking.
- Work towards Level 2 Food Hygiene Certificate
- Ability to follow Food Production and Food Safety Procedures.
- Ability to use Food Production Equipment.
- Ability to undertake all training sessions relevant to the role of Chef. i.e. Manual Handling, Infection Control & Fire Safety training.
- Able to attend a full weeks induction Monday - Friday
Experience
Desirable criteria
- Working in a kitchen/restaurant environment would be useful.
Communication
Essential criteria
- Ability to communicate with ward staff and other department staff to advise/respond to patient food requirements.
- Ability to cascade information to wards and to their colleagues.
- Ability to produce and record basic written information in a clear and legible way
