Main duties of the job

Responsible for ensuring the provision of a sustainable high quality and nutritious meal service is provided to patients at ward level. In addition to this, ensure that a wide range of hot and cold meals are provided for staff and visitors in the designated restaurants and cafes throughout the site.

To lead, develop and deliver all aspects of staff training to include food hygiene and related topics at the departmental induction ensuring any further training required is identified and acted upon. Ensure all staff receive an annual appraisal, maintain and update records and provide statistical information as required to senior management.

Responsible for ensuring that sickness absence is managed effectively and in line with the Trust’s Policies and Procedures; maintain accurate  statistical information for analysis, identify trends and take appropriate action to ensure that absences are dealt with in a timely manner, seeking advice from Human Resources where necessary.

Responsible for the effective management of departmental budgets, attend monthly meetings with the Trust’s Finance department in order to monitor and take appropriate action to ensure a balanced budget is achieved.

Detailed job description and main responsibilities

Provide leadership to the site team developing future capacity.

Responsible for reviewing catering contracts with suppliers to ensure sustainable procurement of food at value for money prices whilst complying with Food Hygiene Regulations identified in the Food Safety Policy.

Budget Holder for Restaurant and Patient Feeding Services.

Responsible for identifying and implementing effective methods of practice within Facilities, complying with the Trust’s Food Safety codes of practice and National standards.

 To be a point of contact with clinical teams regarding the nutrition and hydration needs of patients catering contract requirements, advising on service provision and liaising with the Hotel Services Manager on any additional arrangements

Ensure effective line management of the catering team to include Human Resources issues as and when they arise, such as disciplinary investigations, grievances and other staff related issues.

Experience and Knowledge

Essential criteria
  • Minimum of 5 years (recent) experience in a catering environment preferably in the NHS.
  • Management of HR related issues.
  • To have experience and knowledge of the full range of patient catering including range of cooking methodologies , nutrition, menu development.
  • Knowledge of budget management and income generation.
  • Recruitment & selection process
  • Experience of undertaking investigations and presenting disciplinary cases
Desirable criteria
  • To have experience of managing retail outlets.

Qualification(s) and Professional Training

Essential criteria
  • Educated to degree level or equivalent and evidence of continual professional development.
  • Professional Management qualification
  • Craft based qualification e.g city & guilds or equivalent.
  • Food Hygiene certificate level 4 food safety qualification or equivalent (Advanced Food Hygiene)
  • Willing to undertake future development training
Desirable criteria
  • Active member of a relevant NHS association in Facilities Management.
  • Recognised HACCP qualification
  • Member of the HCA
  • High level health & safety qualification, e.g. NEBOSH, ISOH.

Skills and Abilities

Essential criteria
  • Excellent communication skills in order to deal with a wide range of patients, visitors and staff ( at all levels )
  • Confident and able to work with regulatory bodies , e.g. EHO
  • Ability to work across the Facilities Department and assist with projects.
  • Excellent IT and report writing skills
  • Knowledge of catering production operations, food safety, cook chill processes, HACCP and dietary requirements.
  • An understanding of infection control risks, policies and procedures.
  • Knowledge of Statutory and mandatory regulations relating to catering services, e.g Food Hygiene Regulations, Food Safety Act 1990.
  • Excellent budgetary management skills

  • Understanding of NHS Initiatives and standards e.g Better Hospital Food, PLACE
  • An understanding of multi faith requirements
